Ingredients
1 kg pumpkin cooked and mashed
1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
2 leeks sliced or 2 large onions, diced
3 cloves garlic, diced
8 eggs, lightly beaten
500gm low fat cottage cheese
1/4 cup honey (optional)
2 teaspoons nutmeg
2 tablespoons dried mixed herbs
1 cup finely chopped fresh mixed herbs
Sea salt and black pepper
Pre-prepared pie shell
Optional:
1 cup of sliced zucchini, diced broccoli, cauliflower or other vegetables
Method
Preheat the over to 220c. Heat the oil in a frying pan and add the leek or onion and the garlic. Add the pumpkin (and optional vegetables if required) and saute for 30 minutes. Place into the pie shell and place the oven, covered with foil and cook for 30 minutes. Then uncover and cook until firm and golden.
Serves 6-8 people.
